Tongseng Ayam (Indonesian Chicken Curry)

Ingredients:

  • 250 grams chicken breast fillet
  • 1 tomato
  • 3 cabbage leaves
  • 1 stalk lemongrass
  • 4 kaffir lime leaves
  • 1 piece galangal

Spices:

  • 3 shallots
  • 1 clove garlic
  • 4 bird’s eye chilies (adjust to taste)
  • Coriander (optional)
  • Black pepper
  • 1 piece turmeric
  • Salt
  • Sweet soy sauce
  • Granulated sugar

Instructions:

Preparation:

  1. Prepare the Ingredients:

    • Boil the chicken breast fillet until cooked, then cut it into bite-sized cubes.
    • Wash the cabbage leaves and tomato thoroughly, then cut them into desired sizes.
    • Prepare the lemongrass by bruising the stalk slightly to release its flavor.
    • Peel and slice the galangal.
  2. Prepare the Spices:

    • Finely slice the shallots, garlic, and bird’s eye chilies.
    • Grind the coriander, black pepper, and turmeric into a smooth paste using a mortar and pestle.

Cooking:

  1. Sauté the Spices:

    • In a large pan or wok, heat a bit of oil over medium heat.
    • Add the sliced shallots, garlic, and bird’s eye chilies. Sauté until they become fragrant and golden brown.
    • Add the ground spice paste and continue to sauté for a few more minutes until the spices are well combined and aromatic.

    • Add enough water to the pan to create a curry sauce.
    • Season with salt, sweet soy sauce, and a pinch of granulated sugar. Stir well and bring the mixture to a boil.
    • Add the cooked chicken cubes to the pan, stirring to coat them evenly with the sauce.
  3. Add Vegetables:

    • Just before removing the pan from heat, add the chopped cabbage and tomato pieces.
    • Allow the vegetables to cook briefly in the sauce, ensuring they remain crisp-tender.
  4. Final Adjustments:

    • Taste the curry and adjust the seasoning as needed, adding more salt or soy sauce to suit your preference.
  5. Serve:
