Ayam Geprek Jeletot: A Spicy Indonesian Chicken Delight

Ingredients:

For the Chicken:

  • 6 pieces of chicken wings

For the Ground Spice Blend:

  • 1-inch piece of turmeric
  • 5 shallots
  • 3 garlic cloves
  • 4 candlenuts
  • Black pepper to taste
  • 1-inch piece of ginger
  • 2 bay leaves
  • 3 kaffir lime leaves

For the Sambal Geprek:

  • 15 Java chili peppers (or substitute with other small hot chilies)
  • 3 shallots
  • 1 garlic clove
  • Salt to taste
  • Seasoning (e.g., chicken bouillon) to taste
  • Sugar to taste
  • Cooking oil for frying

Instructions:

  1. Prepare the Chicken:

    • Clean the chicken wings thoroughly.
  2. Cook the Spice Blend:

    • In a pan, heat a bit of oil. Sauté the ground spice blend ingredients (turmeric, shallots, garlic, candlenuts, black pepper, ginger, bay leaves, and kaffir lime leaves) until fragrant and slightly dry.
    • Add the chicken wings to the pan, along with a small amount of water. Season with salt, seasoning powder, and sugar.
    • Simmer until the chicken is tender and the spices are well absorbed.
  3. Fry the Chicken:

    • Remove the chicken from the pan and let it drain. Heat oil in a separate pan and fry the chicken wings until golden brown and crispy.
  4. Prepare the Sambal Geprek:

    • In a pan, heat some oil and fry the Java chilies, shallots, and garlic until they are softened.
    • Transfer the fried ingredients to a mortar and pestle, add salt, seasoning powder, and sugar, and grind until the sambal is finely mixed but still slightly coarse.
  5. Assemble the Dish:

    • Add a small amount of hot oil from frying the chicken to the sambal to enhance the flavor.
    • Place the fried chicken wings on a serving plate and gently crush (geprek) them to allow the sambal to seep in.
    • Spread the sambal over the chicken wings and mix gently to ensure the sambal is well incorporated.
  6. Serve:

    • Enjoy your Ayam Geprek Jeletot while it’s hot. This dish is perfect with steamed rice and a side of fresh vegetables.
