Karabu Telor (Indonesian Spicy Egg Salad)
Ingredients:
- 8 large eggs, boiled and peeled
- For the Sambal:
- 15 red curly chilies
- 5 red bird’s eye chilies
- 3 cloves garlic
- 8 shallots
- 2 red tomatoes
- Salt, to taste
- 1 lime

Prepare the Eggs: Begin by boiling the eggs until they are fully cooked. Once done, peel the eggs and set them aside.

Cook the Sambal: In a pot, bring water to a boil and add the red curly chilies, bird’s eye chilies, garlic, shallots, and red tomatoes. Cook until all ingredients are softened and the chilies have wilted. Remove from heat and drain.

Make the Sambal: Transfer the cooked ingredients to a mortar and pestle, or a food processor, and grind them into a smooth paste. Add salt to taste and adjust seasoning as needed.

Finish the Sambal: Squeeze the juice of one lime into the sambal paste and mix well.

Assemble the Dish: Pour the sambal over the boiled eggs, making sure each egg is generously coated with the spicy sauce.

Serve: Arrange the eggs on a serving plate, ready to be enjoyed as a flavorful and spicy appetizer or side dish.
