Indonesian Spicy Fried Beef Skewers

Sate Daging Sapi Goreng (Indonesian Fried Beef Skewers)

Ingredients:

  • 500 grams beef, cut into cubes
  • 3 shallots
  • 3 cloves garlic
  • 1 large red chili pepper (adjust to taste)
  • 5-10 small red chilies (adjust to taste)
  • 100 grams roasted unsalted peanuts
  • A small piece of ginger
  • 3 bay leaves
  • 3 kaffir lime leaves
  • 1 teaspoon beef bouillon (such as Royco)
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground coriander
  • Soy sauce (optional, to taste)
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 500 ml water
  • Cooking oil for sautéing

Instructions:

  1. Prepare the Beef:

    • Thoroughly wash the beef cubes. Place them in a pot and bring to a boil. Cook the beef until it is half done; it should still be slightly firm as it will cook further with the spices.
  2. Blend the Spices:

    • While the beef is cooking, prepare the spice paste. In a blender or food processor, combine the shallots, garlic, large red chili pepper, small red chilies, ginger, and ground coriander. Blend until smooth.
  3. Cut and Sauté:

    • Once the beef is partially cooked, cut it into bite-sized cubes. Set aside.
    • Heat oil in a pan over medium heat. Add the spice paste and sauté until fragrant. Incorporate the roasted peanuts, bay leaves, and kaffir lime leaves. Continue to cook until the mixture is aromatic.
  4. Combine and Simmer:

    • Pour 250 ml of water into the pan with the spice mixture. Stir well to combine.
    • Add the beef cubes to the pan along with another 250 ml of water. Allow the mixture to simmer until it starts to bubble and reduce.
  5. Season and Finish:

    • Season the dish with salt, sugar, ground black pepper, and beef bouillon. Adjust the soy sauce to taste if desired.
    • Stir well and taste the seasoning. Cook until the liquid has almost evaporated and the beef is well-coated with the spice mixture.
  6. Serve:

    • Once the sauce has thickened and the beef is fully cooked, remove from heat. Your Sate Daging Sapi Goreng is now ready to serve!
