Spicy Red Beef (Daging Sapi Bumbu Merah)

Ingredients:

  • 500 grams of beef slices

For the Spice Paste:

  • 6 large red chilies (de-seeded from 4 of them)
  • 5 cloves of garlic
  • 7 shallots
  • 1/2 teaspoon of whole peppercorns
  • 1 thumb-sized piece of ginger
  • 1/2 tomato
  • 4 kaffir lime leaves
  • 1/2 onion, diced into cubes
  • Salt and sugar to taste
  • 1 tablespoon of sweet soy sauce (kecap manis, Bango brand preferred)
  • Water as needed
  • 2 tablespoons of vegetable oil

Steps:

  1. Prepare the Beef:

    • Slice the beef against the grain, wash it thoroughly, and set it aside.
  2. Make the Spice Paste:

    • Using a mortar and pestle or a food processor, grind the chilies, garlic, shallots, peppercorns, ginger, and tomato into a smooth paste.
  3. Cook the Spice Paste:

    • Heat the vegetable oil in a pan over medium heat. Add the spice paste and sauté until it becomes fragrant.
  4. Add the Beef:

    • Add the sliced beef, sweet soy sauce, and kaffir lime leaves to the pan. Stir until the beef changes color.
  5. Simmer:

    • Pour in enough water to cover the beef. Simmer until the beef becomes tender, the flavors meld together, and the water reduces to a thick sauce.
  6. Season:

    • Add salt and sugar to taste. Stir well and adjust the seasoning as needed. Continue cooking until the sauce is well absorbed by the beef.
  7. Serve:

    • Remove from heat and serve the spicy red beef hot.

Optional:

  • If you like the nutty flavor, you can add 3-4 roasted candlenuts (kemiri) to the spice paste for a richer taste.
