Ingredients:

  • 4 large eggs
  • 3 shallots
  • 3 cloves garlic
  • 3 red chilies
  • 1/2 candlenut
  • 1 bay leaf
  • 1 kaffir lime leaf
  • 1 segment galangal
  • Seasonings: Royco (or other seasoning powder) and sugar to taste

Instructions:

  1. Begin by boiling the eggs until fully cooked. Once done, peel the eggs and set them aside.

  2. In a blender, combine the shallots, garlic, red chilies, and candlenut. Blend until the mixture forms a smooth paste.

  3. Heat a bit of oil in a pan over medium heat. Add the blended spice paste, bay leaf, kaffir lime leaf, and galangal. Sauté until the mixture becomes fragrant and the oil starts to separate.

  4. Season the sautéed spices with Royco (or your preferred seasoning powder) and sugar. Adjust the amounts to suit your taste.

  5. Add the boiled eggs to the pan, along with a small amount of water to create a sauce. Simmer until the water reduces and the eggs are well coated with the spice mixture.

  6. Serve the Semur Telur warm, garnished as desired. Enjoy this flavorful Indonesian dish!
