Telor Balado: A Spicy and Sweet Indonesian Egg Dish

Ingredients

Ingredient Quantity
Eggs (Telor) 1/2 kg (about 10 eggs)
Red Chilies (Cabe Merah) 10
Bird’s Eye Chilies (Cabe Rawit Merah) 10
Sweet Soy Sauce (Kecap Manis) To taste
Salt To taste
Shallots (Bawang Merah) 5
Garlic (Bawang Putih) 4
Ginger (Jahe) 1 cm
Galangal (Lengkuas) 1 cm (lightly crushed)
Candlenuts (Kemiri) 3 (toasted)
Tomatoes 2
Water As needed

Instructions

  1. Boil the Eggs: Begin by boiling the eggs until fully cooked. Once done, remove them from the water and allow to cool before frying. After frying, set the eggs aside to drain.

  2. Prepare the Spice Paste: In a blender, combine the red chilies, bird’s eye chilies, shallots, garlic, ginger, tomatoes, and toasted candlenuts. Blend until you achieve a smooth paste; you can skip adding water since the tomatoes provide enough moisture.

  3. Cook the Spice Mixture: In a pan, heat a bit of oil over medium heat and sauté the blended spice paste until fragrant and cooked through.

  4. Season the Mixture: Add sweet soy sauce, the crushed galangal, and salt to the pan. Adjust the seasoning to achieve a balance of sweet and spicy, which is the hallmark of Telor Balado. If necessary, add a small amount of water to reach your desired consistency.

  5. Combine Eggs and Sauce: Once the spice mixture is well-cooked, gently incorporate the fried eggs, stirring carefully to ensure the eggs are coated with the flavorful sauce.

  6. Final Touches: Let the dish simmer briefly to allow the flavors to meld. Once everything is well combined, it’s ready to serve!

Enjoy your delicious Telor Balado, bursting with flavor that will impress everyone at your table!
