Indonesian Spicy Tamarind Chicken Wings (Garang Asem)

Garang Asem Sayap Ayam Recipe

Ingredients:

  • 750 grams chicken wings
  • 65 ml coconut milk (santan Kara)
  • 750 ml water
  • Salt and sugar, to taste
  • 7 small red chilies, thinly sliced
  • 5 cloves garlic, minced
  • 10 large green chilies
  • 2 bay leaves
  • 4 kaffir lime leaves
  • 2 stalks lemongrass, bruised
  • 1 thumb-sized piece of ginger, bruised
  • 1 thumb-sized piece of galangal, bruised
  • 4 green tomatoes, chopped
  • Tamarillo (belimbing wuluh), to taste

Instructions:

  1. Prepare the Aromatics: Heat a bit of oil in a large pot over medium heat. Add the sliced red chilies, minced garlic, and sauté until fragrant. Avoid adding the green tomatoes and tamarillo at this stage.

  2. Cook the Chicken: Pour in the water and add the chicken wings. Bring to a simmer and cook until the chicken is halfway done.

  3. Add Vegetables and Fruits: Stir in the green chilies, chopped green tomatoes, and tamarillo. Continue to cook until the chicken is almost fully cooked.

  4. Incorporate Coconut Milk: Add the coconut milk to the pot. Season with salt and sugar to taste. For added flavor, you can also include a bit of Masako or another seasoning of your choice. Adjust seasoning according to your preference.

  5. Simmer and Serve: Allow the mixture to come to a boil and cook until the sauce has thickened and the flavors have melded together. Taste and adjust the seasoning as needed.

  6. Garnish and Serve: Once the Garang Asem is ready, serve hot with steamed rice or your favorite side dish.
