Penyetan TETATE (Tempe Tahu Terong)

    • 6 curly red chilies
    • 8 bird’s eye chilies
    • 7 shallots
    • 1 clove garlic
    • 1 small packet shrimp paste (terasi, such as Mamasuka brand)
    • 1 large tomato
    • 1 slice lime
    • Salt, to taste
    • Granulated sugar, to taste
    • Cooking oil, for frying

Instructions:

  1. Prepare the Frying Mixture:

    • Start by making the frying mixture: Blend together garlic, salt, and coriander seeds with a bit of water until smooth. This will serve as a marinade for your tempeh, tofu, and eggplant.
  2. Prepare the Tempeh, Tofu, and Eggplant:

    • Slice the tempeh, tofu, and eggplant to your desired thickness.
    • Dip the tempeh and tofu slices into the prepared frying mixture, ensuring they are well-coated. For the eggplant, simply wash and slice it; you can skip the dipping step and proceed directly to frying.
    • Heat oil in a pan over medium heat. Fry the tempeh, tofu, and eggplant until they are golden brown and crispy. Set aside.
  3. Make the Sambal:

    • For the sambal, finely slice the shallots, garlic, curly red chilies, bird’s eye chilies, and tomato.
    • Heat 3 tablespoons of cooking oil in a pan. Add the sliced ingredients along with the shrimp paste. Fry until the ingredients are softened and aromatic.
    • Transfer the mixture to a mortar and pestle (or food processor) and grind until smooth. Adjust seasoning with salt and sugar to taste.
    • Squeeze in the lime juice and mix thoroughly for a tangy kick.
  4. Serve:

    • Arrange the fried tempeh, tofu, and eggplant on a serving platter. Top with the freshly made sambal.
