Ingredients
- 10 pieces of fresh tuna
- 1 thumb-sized piece of ginger
- A pinch of salt
- Juice of 1 lime

- 1 stalk of lemongrass, smashed
- 2 thumb-sized pieces of galangal, smashed
- Oil for sautéing
- 600 ml water
- Salt and sugar to taste
- 10 red bird’s eye chilies

- Rub the tuna pieces with lime juice, salt, and finely crushed ginger. Let them marinate for 15 minutes, then rinse thoroughly and set aside.
