Tuna Woku Segar: A Delightful Indonesian Tuna Stew

Ingredients

  • 10 pieces of fresh tuna
  • 1 thumb-sized piece of ginger
  • A pinch of salt
  • Juice of 1 lime
  • For the Spice Paste:
    • 2 thumb-sized pieces of roasted turmeric
    • 1 thumb-sized piece of ginger
    • 3 roasted candlenuts
    • 4 shallots
    • 2 cloves of garlic
    • 15 curly red chilies
  • Other Ingredients:
    • 3 stalks of scallions
    • 1 bunch of Thai basil
    • 5 cherry tomatoes
    • 5 kaffir lime leaves
    • 2 bay leaves
    • 1 stalk of lemongrass, smashed
    • 2 thumb-sized pieces of galangal, smashed
    • Oil for sautéing
    • 600 ml water
    • Salt and sugar to taste
    • 10 red bird’s eye chilies

Instructions

  1. Prepare the Tuna:

    • Rub the tuna pieces with lime juice, salt, and finely crushed ginger. Let them marinate for 15 minutes, then rinse thoroughly and set aside.
  2. Make the Spice Paste:

    • Blend together the roasted turmeric, ginger, candlenuts, shallots, garlic, and curly red chilies until you achieve a smooth paste.
  3. Cook the Base:

    • Heat some oil in a pan over medium heat. Sauté the galangal, lemongrass, kaffir lime leaves, and bay leaves until they release a fragrant aroma.
  4. Sauté the Spice Paste:

    • Add the blended spice paste to the pan and cook, stirring frequently, until the paste is fragrant and the oil starts to separate from it.
  5. Cook the Tuna:

    • Add the marinated tuna to the pan and cook until it is half-cooked.
  6. Simmer the Stew:

    • Pour in the water and season with salt and sugar. Allow the mixture to come to a boil, then reduce the heat and let it simmer.
  7. Add the Vegetables:

    • Introduce the cherry tomatoes, scallions, and Thai basil to the stew. Continue to cook until the vegetables are tender and the flavors are well combined.
