Ingredients

  • 5 red bird’s eye chilies (cabai rawit merah)
  • 2 cm turmeric, roasted and chopped
  • 2 cm ginger
  • 8 candlenuts (kemiri), roasted
  • 1 1/2 teaspoons salt

Instructions

  1. Prepare the Tuna:

    • Rub the tuna pieces with lime juice. Let it sit for 10 minutes to reduce the fishy smell, then rinse thoroughly.
  2. Make the Spice Paste:

    • In a blender or food processor, blend the shallots, red chilies, roasted turmeric, ginger, roasted candlenuts, and salt until smooth.

    • In a large pot, heat a small amount of oil over medium heat. Add the spice paste, kaffir lime leaves, pandan leaves, turmeric leaf, and lemongrass. Sauté until fragrant, about 5 minutes.

    • Pour in the water and bring to a boil. Add the tuna pieces and cook until the fish is cooked through, about 10-15 minutes.
  5. Final Touches:

    • Stir in the basil leaves, green onions, and tomato. Continue to cook until the vegetables are softened and the flavors have melded together, about 5 minutes.
