Ingredients

  • Bean Sprouts (Toge): 1/2 kg
  • Yellow Tofu (Tahu Kuning): 5 pieces
  • Fermented Soybean Paste (Tauco): 2 packets (similar to the Mambo brand)
  • Fermented Soybean Cake (Oncom): 1 small piece
  • Spring Onion (Daun Bawang): 1 stalk
  • Dried Red Chilies (Cabe Merah): 5 pieces
  • Small Red Chilies (Cabe Rawit Merah): 10 pieces
  • Green Small Chilies (Cabe Rawit Hijau): 20 pieces (left whole)
  • Shallots (Bawang Merah): 5 cloves
  • Garlic (Bawang Putih): 3 cloves
  • Bay Leaves (Daun Salam): 3 leaves
  • Salt (Garam): to taste
  • Seasoning (Penyedap Rasa): optional
  • Palm Sugar (Gula Merah): to taste
  • White Sugar (Gula Putih): to taste
  • Sweet Soy Sauce (Kecap Bango): to taste
  • Cooking Oil: for frying
  • Water: 700 ml

Instructions

  1. Prepare the Tofu:

    • Cut the tofu into bite-sized pieces.
    • Heat oil in a frying pan and fry the tofu pieces until they are half-cooked and golden brown. Remove and set aside.
  2. Prepare the Spice Paste:

    • In a bowl, crush the oncom and tauco together until well combined.
    • In a mortar and pestle or blender, grind the dried red chilies, small red chilies, shallots, and garlic into a smooth paste.
  3. Cook the Spice Paste:

    • Heat a generous amount of oil in a pan over medium heat.
    • Add the ground spice paste and sauté until fragrant and the raw smell dissipates.
  4. Combine Ingredients:

    • Add the crushed oncom and tauco mixture to the pan.
    • Stir in the whole green small chilies, bay leaves, salt, palm sugar, white sugar, and sweet soy sauce.
    • Pour in the water and bring the mixture to a boil.
  5. Add the Tofu:

    • Once the sauce has thickened slightly, add the fried tofu pieces.
    • Stir to coat the tofu evenly with the sauce.
  6. Add the Bean Sprouts and Spring Onion:

    • Add the bean sprouts and chopped spring onion to the pan.
    • Cook until the bean sprouts are tender and well combined with the sauce.
  7. Adjust Seasoning:

    • Taste and adjust the seasoning as needed, adding more salt, sugar, or soy sauce if desired.
  8. Serve:

    • Once everything is well-cooked and the flavors are balanced, remove from heat.
    • Serve the Toge Goreng Tahu hot, garnished with extra spring onions if desired.
