    • 50 grams palm sugar, grated
    • 1/2 teaspoon fine salt
    • 2 green tomatoes, quartered
    • 5-6 tamarind pods
    • 1 tablespoon sweet soy sauce
    • Sugar, instant broth or seasoning, to taste

Steps

  1. Sauté the Aromatics:
    Begin by heating a little oil in a pan over medium heat. Add the minced garlic and sauté until fragrant. Next, incorporate the sliced shallots, green large chilies, and red bird’s eye chilies. Continue to sauté until the mixture becomes aromatic and the shallots are tender.

  2. Combine Ingredients:
    Add the boiled beef pieces to the pan. Stir to combine with the sautéed mixture. Next, incorporate the additional seasonings: tamarind pods, green tomatoes, palm sugar, and sweet soy sauce. Stir well to ensure all the flavors meld together.

  3. Add Broth and Vegetables:
    Pour in the beef broth and bring the mixture to a boil. Once boiling, add the chopped green beans. Allow the stew to simmer until the green beans are tender and cooked through.

  4. Season to Taste:
    Taste the stew and adjust the seasoning with sugar, instant broth, or other seasonings to achieve the desired balance of sweet, sour, and spicy flavors.

  5. Serve:
