Spicy Ayam Gongso (Indonesian Sweet and Spicy Chicken)
Ingredients:
- 250 grams chicken, cut into pieces
- 1 tomato, chopped
- 3 tablespoons sweet soy sauce (kecap manis)
- Salt, to taste
- Chicken bouillon powder, to taste
- 50 ml water
- Green onions, chopped
- Fried shallots, for garnish
- Thinly sliced cabbage, as desired
- 5 shallots, sliced
- For the spice paste:
- 8 shallots
- 4 cloves garlic
- 8 red chilies
- 5 bird’s eye chilies
- 2 candlenuts
- 1 teaspoon black pepper

- Blend the shallots, garlic, red chilies, bird’s eye chilies, candlenuts, and black pepper into a smooth paste using a food processor or mortar and pestle.

Cook the Aromatics:
- Heat a little oil in a pan over medium heat. Sauté the sliced shallots and the prepared spice paste until fragrant and the shallots begin to soften.

Add Tomato and Liquid:
- Add the chopped tomato to the pan and cook until the tomato starts to soften. Pour in the water and stir to combine.

Season and Simmer:
- Add the sweet soy sauce, salt, and chicken bouillon powder. Stir to combine and bring the mixture to a gentle simmer.

Cook the Chicken:
- Add the chicken pieces to the pan. Cook, stirring occasionally, until the chicken is fully cooked and the sauce has thickened to your liking. If you prefer a bit of sauce, leave it slightly watery.

- Stir in the thinly sliced cabbage and green onions. Cook for an additional few minutes until the cabbage is tender and has wilted slightly.
