Semur Daging Sapi (Indonesian Beef Stew)

Ingredients

  • 250 grams beef, cut into cubes
  • 2 potatoes, peeled and cut into chunks
  • Spice Paste:
    • 3 candlenuts
    • 4 shallots
    • 3 cloves garlic
    • 1 teaspoon ground white pepper
  • Water (as needed)
  • Sweet soy sauce (kecap manis), to taste
  • Salt, to taste
  • Sugar, to taste

Preparation Steps

  1. Prepare the Spice Paste: Blend the candlenuts, shallots, garlic, and white pepper into a smooth paste.
  2. Sauté the Paste: In a large pan, heat a bit of oil and sauté the spice paste until it becomes fragrant.
  3. Cook the Beef: Add the beef cubes to the pan, stirring until they change color and are well coated with the spices.
  4. Simmer: Pour in enough water to cover the beef, then add the sweet soy sauce, salt, and sugar. Stir well and bring to a boil.
  5. Add Potatoes: Once the stew is boiling, add the potato chunks. Taste and adjust the seasoning as necessary.
  6. Cook Until Tender: Reduce the heat to a simmer and cook until the beef and potatoes are tender and the liquid has reduced to a thick, flavorful sauce.
  7. Serve: Transfer the stew to a serving dish and enjoy it warm, ideally with steamed rice.
