Ayam Bakar Teflon Spesial: A Delightful Indonesian Chicken Recipe
Ingredients:
- 1 kg chicken (cut into pieces)
- 1 lemon
- 1 thumb-sized ginger
- 1.5 thumb-sized turmeric
- 1 tablespoon coriander seeds
- 1 stalk lemongrass
- 1 round palm sugar
- 1.5 teaspoons black pepper
- 6 shallots
- 4 garlic cloves
- 4 green bird’s eye chilies
- 1 onion
- 1 thumb-sized galangal
- 1 teaspoon salt
- 1/2 teaspoon chicken bouillon powder (Masako)
- 4 bay leaves
- 3 candlenuts
- 1/2 cup coconut milk
- 7 tablespoons sweet soy sauce (kecap manis)
Instructions:

Prepare the Chicken:
- Clean the chicken pieces thoroughly. Squeeze the lemon over the chicken and let it marinate while you prepare the spice paste.

Make the Spice Paste:
- In a blender or food processor, combine the shallots, garlic, coriander seeds, black pepper, candlenuts, green chilies, palm sugar, ginger, and turmeric. Blend until you get a smooth paste.
- Slice the onion into two parts. Heat a pan and sauté the onion until it becomes fragrant. Add the spice paste and continue cooking until aromatic.
- Add the lemongrass (bruised), galangal, and bay leaves to the pan. Stir well to combine.

Cook the Chicken:
- Pour 2.5 cups of water into the pan and bring to a simmer.
- Add the chicken pieces, salt, and chicken bouillon powder. Taste and adjust the seasoning if needed. If the dish tastes too acidic, add a bit of palm sugar or white sugar as needed.
- Cover the pan and cook until the chicken is tender and the sauce reduces, stirring occasionally to ensure even cooking.

Prepare the Sweet Soy Sauce Glaze:
- Slice the remaining onion and mix it with chopped green chilies if desired. Combine with sweet soy sauce in a bowl.

- Once the chicken is cooked and the sauce has thickened, separate the chicken from the sauce.
- Mix the remaining sauce with the sweet soy sauce mixture.
- Heat a dry non-stick pan (teflon) over low heat. Once hot, place the chicken pieces in the pan, brushing with the sweet soy sauce mixture and turning occasionally until the chicken is slightly caramelized and the glaze is well absorbed.
