Ingredients:

  • Tofu: 6-7 pieces (cut into triangular shapes) or adjust according to preference
  • Eggs: 4
  • Kara Coconut Milk: Enough to taste
  • Indofood Curry Spice Mix: 2 tablespoons
  • Bay Leaves: 2
  • Lemongrass: 1 stalk (bruised)
  • Galangal: 1/2 thumb-sized piece
  • Kaffir Lime Leaves: 2
  • Sugar: 1 teaspoon
  • Salt: 2 teaspoons
For the Spice Paste:
  • Candlenuts: 1
  • Garlic: 3 cloves
  • Turmeric: 2 cm piece
  • Shallots: 7
  • Large Red Chilies: 2 (adjust to taste)
  • Bird’s Eye Chilies: 8 (adjust to taste)

Instructions:

  1. Prepare the Eggs:

    • Boil the eggs in water until fully cooked. Once done, peel them and set them aside.
  2. Fry the Tofu:

    • Heat oil in a pan and fry the tofu pieces until they are golden and crispy. Remove and set them aside.
  3. Make the Spice Paste:

    • In a blender or food processor, combine candlenuts, garlic, turmeric, shallots, red chilies, and bird’s eye chilies. Blend until smooth to form a spice paste.
  4. Sauté the Spice Paste:

    • In a pan, heat a little oil over medium heat. Add the spice paste along with bay leaves, bruised lemongrass, galangal, and kaffir lime leaves. Sauté until the spices are fragrant and the oil begins to separate from the paste.
  5. Cook the Curry:

    • Bring a pot of water to a boil. Add the sautéed spice paste to the boiling water.
    • Stir in the fried tofu and boiled eggs into the pot.
    • Pour in the Kara coconut milk and add the Indofood curry spice mix. Stir to combine.
    • Add sugar and salt. Adjust seasoning to taste.
  6. Simmer:

    • Allow the curry to simmer for about 10-15 minutes, letting all the flavors meld together and the sauce to thicken slightly.
