Indonesian Tofu Coconut Curry (Sayur Lodeh Tahu)

Sayur Lodeh Tahu (Indonesian Tofu Vegetable Stew)

Ingredients:

  • 6 pieces of fried tofu

For the Spice Paste:

  • 5 shallots
  • 3 cloves garlic
  • 3 bird’s eye chilies
  • 2 cm turmeric
  • 1 teaspoon coriander seeds

Additional Ingredients:

  • 3 cm galangal, crushed
  • 3 bay leaves
  • 2 kaffir lime leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/4 teaspoon ground white pepper
  • 1/2 teaspoon chicken-flavored seasoning powder
  • 1 pack of instant coconut milk (Kara brand preferred)
  • Water, as needed

Instructions:

  1. Prepare the Spice Paste:

    • In a blender or food processor, combine the shallots, garlic, bird’s eye chilies, turmeric, and coriander seeds. Blend until smooth to form the spice paste.
  2. Cook the Spice Paste:

    • Heat a little oil in a large pot over medium heat. Add the spice paste and sauté until fragrant, stirring frequently to avoid burning.
  3. Add Additional Ingredients:

    • Once the spice paste is aromatic, add the crushed galangal, bay leaves, and kaffir lime leaves. Continue to sauté for a few more minutes until the spices are well incorporated.
  4. Incorporate the Coconut Milk:

    • Add the instant coconut milk to the pot, stirring well to combine. Ensure the coconut milk is well mixed with the spices.
  5. Add Water:

    • Pour in enough water to achieve your desired consistency for the stew. Mix thoroughly to ensure the coconut milk does not separate.
  6. Add the Tofu:

    • Gently add the fried tofu pieces into the pot. Stir carefully to avoid breaking the tofu and to ensure the coconut milk remains smooth.
  7. Season the Stew:

    • Season the stew with salt, sugar, ground white pepper, and chicken-flavored seasoning powder. Stir gently to distribute the seasonings evenly.
  8. Simmer:

    • Bring the stew to a gentle boil, then reduce the heat and let it simmer for a few minutes to allow the flavors to meld together.
  9. Check and Adjust:

    • Taste the stew and adjust the seasoning as needed. Ensure the flavors are balanced to your preference.
  10. Serve:

    • Once the stew is well-seasoned and the tofu is thoroughly heated, remove from heat. Your Sayur Lodeh Tahu is now ready to be served. Enjoy it hot with steamed rice.
