Indonesian Tofu Egg with Spicy Peanut Sauce

Tahu Telor Sambal Kacang: A Flavorful Indonesian Delight

Ingredients:

  • 1 block of firm tofu (white or yellow)
  • 1 handful of bean sprouts
  • 2 stalks of scallions
  • 1 cucumber
  • 1 egg
  • A small amount of fried shallots
  • 2/3 teaspoon salt
  • 1/2 teaspoon Masako (or another bouillon seasoning)
  • A handful of roasted peanuts
  • 3 red chilies
  • 1 green chili
  • 2 candlenuts
  • 3 cloves of garlic
  • Water, as needed
  • Sugar, to taste

Instructions:

  1. Prepare the Ingredients: Start by thoroughly washing the cucumber, peanuts, bean sprouts, garlic, chilies, and tofu. Drain all ingredients well.

  2. Prepare the Tofu: Cut the tofu into small cubes. Place the tofu cubes in a bowl, add a little water and salt. Heat oil in a pan and fry the tofu until it is half-cooked. Remove the tofu from the pan and drain.

  3. Make the Egg Mixture: Crack the egg into a bowl, add salt and a little chopped scallion. Whisk the mixture until well combined. Add the pre-fried tofu cubes to the egg mixture and stir gently. Heat oil in a pan and pour in the egg and tofu mixture. Cook until the egg is set and golden. Remove from heat and drain.

  4. Prepare the Bean Sprouts: Blanch the bean sprouts in boiling water until cooked, then drain.

  5. Make the Peanut Sauce: In a dry pan, roast the chilies, garlic, and peanuts until fragrant (be careful not to burn them). Once roasted, grind or blend these ingredients into a smooth paste. Season the paste with a bit of salt and sugar to taste. Add a small amount of water to achieve the desired consistency for the sauce.

  6. Assemble the Dish: On a serving plate, place the cooked egg. Arrange the bean sprouts on top of the egg. Drizzle the peanut sauce generously over the top. Garnish with chopped scallions, sliced cucumber, and a sprinkle of fried shallots.

  7. Serve and Enjoy: Your Tahu Telor Sambal Kacang is ready to be enjoyed. This flavorful Indonesian dish is perfect as a hearty snack or a delightful addition to any meal.
