Ikan Patin Bumbu Kuning: A Delightful Indonesian Turmeric Catfish Recipe

Ingredients:

  • Catfish (Ikan Patin): 500 grams, cleaned and cut into pieces
  • Firm Tofu (Tahu): 200 grams, cubed
  • Turmeric (Kunir): 1 tablespoon, finely grated
  • Shallots (Bawang Merah): 4-5 cloves, peeled and chopped
  • Garlic (Bawang Putih): 3 cloves, peeled and minced
  • Red Chili Peppers (Cabe): 3-4, deseeded and chopped (adjust according to spice preference)
  • Candlenuts (Kemiri): 3-4, toasted
  • Coconut Milk (Santan): 400 ml
  • Tomatoes (Tomat): 2 medium, chopped
  • Thai Basil (Daun Kemangi): A handful, leaves only

Instructions:

  1. Prepare the Spice Paste: Start by blending the shallots, garlic, red chili peppers, turmeric, and candlenuts into a smooth paste. If necessary, add a small amount of water to facilitate blending.

  2. Sauté the Spice Paste: Heat a generous amount of oil in a large pan over medium heat. Add the blended spice paste and sauté until fragrant and the oil begins to separate from the paste, about 5-7 minutes.

  3. Cook the Catfish: Add the catfish pieces to the pan and stir well to coat them with the spice paste. Pour in just enough water to cover the fish. Allow it to simmer gently until the fish is cooked through and tender, about 15-20 minutes.

  4. Add Remaining Ingredients: Incorporate the tofu cubes, chopped tomatoes, and coconut milk into the pan. Stir gently and let the mixture simmer for an additional 10 minutes, allowing the flavors to meld together.

  5. Finish with Thai Basil: Stir in the Thai basil leaves and cook for another 2-3 minutes. Adjust the seasoning with salt and pepper to taste.
