Indonesian Yellow Chicken (Ayam Bumbu Kuning) Recipe

Ingredients

  • 1 whole chicken (cut into 12 pieces)

  • 1 stalk lemongrass (crushed)
Spice Paste
  • 5 large garlic cloves
  • 5 large shallots
  • 3 segments turmeric (about 3 inches, peeled)
  • 3 segments ginger (about 3 inches, peeled)
  • 1 large piece old galangal (about 3 inches, peeled)
  • 3 candlenuts
  • 1 tablespoon coriander powder
Additional Ingredients
  • 3 tablespoons cooking oil
  • Sugar (to taste)
  • Salt (to taste)
  • Water (as needed)

Instructions

  1. Prepare the Spice Paste: In a blender, combine the garlic, shallots, turmeric, ginger, galangal, candlenuts, and coriander powder. Blend until smooth to create a rich, aromatic spice paste.

  2. Sauté the Spice Paste: Heat the cooking oil in a large pan over medium heat. Add the kaffir lime leaves, bay leaves, and lemongrass to the pan. Stir in the blended spice paste and sauté until fragrant and slightly browned.

  3. Add the Chicken, Tempeh, and Tofu: Place the chicken pieces into the pan, along with the tofu and tempeh. Arrange the tofu on top of the chicken to prevent it from breaking apart during cooking. The chicken should be at the bottom as it takes the longest to cook and will release flavorful juices.

  4. Simmer: Cover the pan and let the mixture simmer. Once the sauce starts to boil, turn the chicken and other ingredients to ensure even cooking. Season with sugar and salt according to taste. Continue to simmer until the chicken is fully cooked and the sauce has thickened, and the flavors are well melded.

  5. Adjust Seasonings: Taste the sauce and adjust the seasoning with additional sugar or salt if needed. Allow the sauce to reduce until it reaches your desired consistency.
