Indonesian Yellow Spiced Chicken Wings

Ayam Rempah Kuning (Yellow Spiced Chicken)

Ingredients:

  • 1/2 kg chicken wings
  • Blended Spices:
    • 2 cloves garlic
    • 2 shallots
    • Bird’s eye chilies (to taste)
    • 2 thumb-sized pieces of turmeric
  • Spices:
    • Star anise (secukupnya, as needed)
    • Cumin (secukupnya, as needed)
    • Cloves (secukupnya, as needed)
    • Kaffir lime leaves
    • Turmeric leaves
    • 1 nutmeg seed
    • Bay leaves (optional)
  • 1 packet of Kara coconut milk
  • Salt, to taste
  • Sugar, to taste
  • Optional:
    • Kenikir leaves (a type of leafy green)
    • Basil leaves

Steps:

  1. Prepare the Spice Blend: In a blender, combine garlic, shallots, bird’s eye chilies, and turmeric. Blend until smooth to create a fragrant spice paste.

  2. Sauté the Spices: In a large pan or wok, heat a bit of oil over medium heat. Add the blended spice paste along with star anise, cumin, cloves, kaffir lime leaves, turmeric leaves, and nutmeg seed. Sauté the mixture until it becomes aromatic and the raw smell of the spices is gone.

  3. Cook the Chicken: Add the chicken wings to the pan. Stir well to coat the chicken with the spice mixture. Pour in enough water to prevent the spices from burning and to help in cooking the chicken evenly.

  4. Add Coconut Milk and Seasoning: Once the chicken is partially cooked, pour in the Kara coconut milk. Season with salt and sugar to taste. Stir and let it simmer over low heat until the chicken is tender and cooked through. If needed, add additional water to ensure the chicken cooks thoroughly and remains moist.

  5. Optional Ingredients: For extra flavor, you can add kenikir and basil leaves in the final stages of cooking. This will enhance the aroma and provide additional freshness to the dish.

  6. Serve: Once the chicken is tender and the sauce has thickened slightly, remove from heat. Serve hot with steamed rice or your favorite side dishes.
