Spice Mix:
- 3 packets of Balinese spice mix (bumbu bali instan)
- 1 stalk of lemongrass (serai)
- 2 bay leaves (daun salam)
- 2 kaffir lime leaves (daun jeruk)
- 1 tablespoon soy sauce (kecap manis)
- 1 tablespoon sugar
- 1 teaspoon salt

- Cooking oil for frying

Prepare the Eggs and Tofu:
- Begin by boiling the eggs until fully cooked. Once cooked, peel the eggs and set aside.
- Cut the tofu into small cubes. Fry the tofu cubes in hot oil until they are golden and crispy. Remove from the oil and set aside.

Cook the Spice Blend:
- Heat a small amount of cooking oil in a pan over medium heat. Add the Balinese spice mix and sauté until fragrant and the oil has separated from the spice mix.
- Add the bay leaves, kaffir lime leaves, and lemongrass to the pan. Stir and cook until the leaves are wilted and the spices are well combined.

Simmer the Sauce:
- Pour in the water and stir to combine with the spices. Cover the pan and allow the mixture to come to a boil.
- Add the sugar, salt, and soy sauce. Stir to ensure the seasonings are evenly distributed. Taste and adjust seasoning if needed.
