Instant Chicken Head and Tofu Curry Recipe

Ingredients:

  • 500 grams chicken heads
  • 4 pieces tofu (cut into cubes and fried)
  • 1 packet instant curry seasoning
  • 1 packet instant coconut milk
  • 5 tablespoons cooking oil
  • 800 ml water
  • 1 stalk green onion (chopped coarsely)
  • Sliced Aromatics:
    • 5 cloves garlic
    • 5 shallots
    • 4 red chilies
    • 5 bird’s eye chilies
    • 4 cm galangal (crushed)
    • 2 bay leaves
    • 2 kaffir lime leaves
  • Seasonings:
    • 1/2 teaspoon chicken bouillon powder
    • 1/4 teaspoon ground black pepper
    • Salt to taste
    • Sugar to taste
    • Optional: seasoning granules

Instructions:

  1. Prepare the Aromatics: Begin by heating the cooking oil in a large pot over medium heat. Add the sliced garlic, shallots, red chilies, bird’s eye chilies, crushed galangal, bay leaves, and kaffir lime leaves. Sauté the mixture until it becomes fragrant and the shallots turn translucent.

  2. Add Curry Seasoning: Stir in the instant curry seasoning and mix well with the aromatics to ensure even distribution of the spices.

  3. Combine Ingredients: Pour in the water and bring the mixture to a gentle boil. Add the chicken heads, making sure they are submerged in the liquid. Season with chicken bouillon powder, ground black pepper, salt, and sugar. Adjust seasoning to taste, and continue to cook until the chicken heads are tender and the broth has reduced slightly.

  4. Incorporate Coconut Milk and Tofu: Stir in the instant coconut milk and add the fried tofu cubes. Mix well and cook until the curry is heated through and the tofu has absorbed some of the flavors. Allow the curry to reach a gentle boil again.

  5. Finish with Green Onions: Add the chopped green onions and give the curry a final stir. Let it simmer for a few more minutes to blend the flavors.
