Instant Noodle Chicken (Mie Ayam) Recipe
Ingredients:
- 1 pack of instant noodles (seasoning packet not used)
- 1 large garlic clove
- 3 small shallots
- 1/2 cm each of turmeric, ginger, galangal
- A pinch of cumin (optional)
- A pinch of coriander and black pepper
- 1 bay leaf
- 1 kaffir lime leaf
- 3 bird’s eye chilies (for sambal)
- Sweet soy sauce, to taste
- Sugar, to taste
- Salt, to taste
- A piece of chicken (optional, not used in this recipe)
- Fried shallots, for garnish

Cook the Noodles and Chilies:
- Boil the instant noodles together with the bird’s eye chilies. Be careful not to overcook the noodles; they should be slightly firm (al dente).

Immediately mash the bird’s eye chilies in a bowl to create a sambal. Mix this sambal with the cooked noodles.

Make the Spiced Broth:
- Using a mortar and pestle, grind the garlic, shallots, turmeric, ginger, galangal, cumin (if using), coriander, and black pepper into a fine paste.
- In a small pan, sauté the spice paste with a little oil until fragrant.
- Add 200 ml of water to the pan.
- Add the bay leaf, kaffir lime leaf, sugar, salt, and sweet soy sauce to the pan. Adjust the seasoning to taste.
- Optionally, add chopped green onions to the broth for added flavor.
