Instant Noodle Chicken (Mie Ayam) Recipe

Ingredients:

  • 1 pack of instant noodles (seasoning packet not used)
  • 1 large garlic clove
  • 3 small shallots
  • 1/2 cm each of turmeric, ginger, galangal
  • A pinch of cumin (optional)
  • A pinch of coriander and black pepper
  • 1 bay leaf
  • 1 kaffir lime leaf
  • 3 bird’s eye chilies (for sambal)
  • Sweet soy sauce, to taste
  • Sugar, to taste
  • Salt, to taste
  • A piece of chicken (optional, not used in this recipe)
  • Fried shallots, for garnish

Instructions:

  1. Cook the Noodles and Chilies:

    • Boil the instant noodles together with the bird’s eye chilies. Be careful not to overcook the noodles; they should be slightly firm (al dente).
  2. Prepare the Sambal:

    • Once the noodles and chilies are cooked, drain them. Immediately mash the bird’s eye chilies in a bowl to create a sambal. Mix this sambal with the cooked noodles.
  3. Make the Spiced Broth:

    • Using a mortar and pestle, grind the garlic, shallots, turmeric, ginger, galangal, cumin (if using), coriander, and black pepper into a fine paste.
    • In a small pan, sauté the spice paste with a little oil until fragrant.
    • Add 200 ml of water to the pan.
    • Add the bay leaf, kaffir lime leaf, sugar, salt, and sweet soy sauce to the pan. Adjust the seasoning to taste.
    • Optionally, add chopped green onions to the broth for added flavor.
  4. Combine and Serve:

    • Pour the spiced broth over the bowl of noodles and sambal.
    • Garnish with fried shallots.
    • Serve immediately and enjoy your delicious Instant Noodle Chicken (Mie Ayam)!

This simplified version of Mie Ayam is perfect for a quick, flavorful meal using instant noodles and a few additional ingredients to elevate the dish. The optional addition of chicken can make it heartier, but it’s delicious even without it. Enjoy the burst of flavors in every bite!
