Ingredients:

  • 1 1/2 cups all-purpose flour

Instructions:

  1. Lightly spoon flours into dry measuring cups, and level with a knife.
  2. In a mixing bowl, combine the all-purpose flour, whole wheat flour, crystallized ginger, baking powder, baking soda, salt, and ground ginger. Stir well with a whisk.
  3. Make a well in the center of the dry ingredients mixture.
  4. In another bowl, combine 1 cup of sugar, applesauce, grated lemon rind, lemon juice, and vanilla extract.
  5. Add the wet ingredients mixture to the flour mixture, stirring just until moist. Cover and chill the dough for at least 1 hour.
  6. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  7. Lightly coat your hands with flour to prevent sticking.
  8. Shape the chilled dough into 24 balls, each about 2 tablespoons in size. The dough will be sticky.
  9. Roll the dough balls in the remaining 1/4 cup of sugar.
  10. Place the coated dough balls 2 inches apart on baking sheets that have been coated with cooking spray.
  11. Bake the cookies at 350 degrees Fahrenheit (175 degrees Celsius) for 15 minutes or until lightly browned.
  12. Allow the cookies to cool for 1 minute on the baking sheet, then transfer them to wire racks to cool completely.
