Description: I developed this recipe by combining a Super Quick Lasagna recipe that does not require the lasagna noodles to be pre-cooked and a Spinach Lasagna recipe which is so delicious it can get anyone, like myself, who dislikes spinach to get their iron.

Ingredients:

Quantity Ingredient
1 Frozen spinach
4 cups Cottage cheese
1 tsp Salt
1/2 tsp Pepper
1/2 cup Tomato sauce
3 3/4 cups Mozzarella cheese
4 Eggs
1 1/2 cups Parmesan cheese

Instructions:

  1. Prepare Spinach Mixture:

    • In a large mixing bowl, combine the frozen spinach (thawed and drained), cottage cheese, egg yolks, pepper, salt, 1/4 cup of tomato sauce, and 2 cups of mozzarella cheese. Mix well until all ingredients are evenly incorporated.
  2. Layering the Lasagna:

    • Preheat your oven to 375°F (190°C).
    • In a greased baking pan, start layering the lasagna in the following manner:
      • Spread a thin layer of tomato sauce on the bottom of the pan.
      • Place lasagna noodles on top of the sauce.
      • Spoon a generous layer of the spinach mixture over the noodles.
      • Drizzle some tomato sauce over the spinach layer.
      • Sprinkle a portion of mozzarella cheese on top.
      • Repeat these layers until you reach the top of the pan.
  3. Creating the Top Layer:

    • For the final layer, place lasagna noodles on top of the last layer of mozzarella cheese.
    • Spread the remaining spinach mixture evenly over the noodles.
    • Sprinkle Parmesan cheese over the spinach layer.
    • Drizzle the remaining tomato sauce on top.
    • Finish by sprinkling the remaining mozzarella cheese over the sauce.
  4. Baking:

    • Cover the baking pan with aluminum foil and bake in the preheated oven for 50 minutes.
    • After 50 minutes, remove the foil and continue baking for an additional 5-10 minutes, or until the top of the lasagna is golden brown and bubbly.
  5. Serving:

    • Once baked, allow the lasagna to cool slightly before slicing and serving.
    • Garnish with fresh herbs if desired, and enjoy this delicious, iron-packed spinach lasagna with friends and family!
