Ingredients:

  • 2 cups cooked Rice
  • 1/4 cup Carrots (Gajjar), chopped
  • 1/2 cup Green Bell Pepper (Capsicum), chopped
  • 1 cup Drumstick Leaves (Moringa/Murungai Keerai)
  • 2 tablespoons Green Chilli Sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Tomato Ketchup
  • Salt, to taste
  • 2 tablespoons Oil

Preparation Time: 25 minutes
Cooking Time: 10 minutes

Instructions:

  1. Heat 2 tablespoons of oil in a wok over medium heat. Add the chopped carrots and a pinch of salt. Sauté until the carrots turn soft.
  2. Add the drumstick leaves and cook for a few more minutes, allowing them to soften and release their flavor.
  3. Next, stir in the chopped capsicum, soy sauce, green chili sauce, and tomato ketchup. Cook until the vegetables are tender and well coated with the sauces.
  4. Add the cooked rice, along with more salt to taste, and toss everything gently to combine. Continue to cook for another minute, making sure all the ingredients are well mixed.
  5. Serve your Drumstick Leaves Fried Rice hot, either on its own or with a side of Chilli Baby Corn (Manchurian) to complete your meal.
