Instructions

  1. Prepare the Coffee
    Start by brewing the coffee using a moka pot. Once brewed, allow it to cool down to room temperature. This step is essential to ensure the proper texture of the muffins.

  2. Cream the Butter and Sugar
    In a large mixing bowl, place the softened butter and sugar. Using electric beaters or a stand mixer, beat the mixture until it becomes smooth and creamy. This process incorporates air into the mixture, giving the muffins their light texture.

  3. Add the Eggs
    Gradually add the first egg to the butter and sugar mixture while continuing to beat. Once fully incorporated, add the second egg and beat again until well combined. It’s crucial that both eggs are absorbed completely before adding the next one, as this ensures a smooth batter.

  4. Combine the Dry Ingredients
    In a separate bowl, sift the all-purpose flour, baking powder, and baking soda. Once sifted, add the dry ingredients directly to the wet mixture. Stir gently until the dry ingredients are mostly combined.

  5. Add the Salt
    Sprinkle in a pinch of fine salt, which enhances the overall flavor of the muffins.

  6. Incorporate the Coffee
    Gradually add the cooled coffee to the batter, pouring it in slowly while stirring. The coffee not only adds flavor but also helps loosen the batter to a smooth, slightly pourable consistency.

  7. Prepare the Muffin Tin
    Line a muffin tin with paper cupcake liners. Using a spoon or ice cream scoop, fill each muffin cup about two-thirds full with the batter. Aim to add approximately 65g of batter per muffin, leaving about a centimeter of space from the top to allow room for the muffins to rise.

  8. Bake the Muffins
    Preheat your oven to 180°C (350°F) in static mode. Place the muffin tin in the center of the oven and bake for about 25 minutes. The muffins are ready when they are golden brown and a toothpick inserted into the center comes out clean.

  9. Cool and Serve
    Once baked, remove the muffins from the oven and let them cool in the tin for a few minutes. Then, transfer them to a wire rack to cool completely before serving.
