Instructions
-
Prepare the Base Dough:
Begin by preparing the base dough for the spiral cake. In the bowl of a stand mixer, sift the flour and add the cardamom, a pinch of salt, and granulated sugar. Set aside. -
Activate the Yeast:
In a small bowl, dissolve the dry yeast in 50 ml of water (or if using fresh yeast, dissolve 9g in the same amount of water). In another small bowl, combine the coffee extract with 50g of warm milk (alternatively, you can use instant coffee). -
Combine Ingredients:
Add the dissolved yeast mixture to the flour, followed by the eggs. Switch the whisk attachment for a dough hook and begin kneading. Gradually add the butter in small pieces until the dough comes together, creating a smooth and elastic texture. -
Let the Dough Rise:
Once the dough is ready, transfer it to a bowl and cover with plastic wrap. Allow it to rest and rise for about 1 hour, or until it has doubled in size. -
Prepare the Filling:
In a small bowl, mix the brown sugar with the ground cinnamon. Add the butter to this mixture and stir to combine. Once the butter has softened, add the coffee extract (or the same amount of instant coffee) and continue mixing until smooth and homogenous. -
Shape the Dough:
Grease a 22 cm round cake pan and line it with parchment paper. Roll the dough out onto a floured surface, forming a rectangle roughly 30×45 cm. Spread the prepared coffee and butter filling evenly over the dough, leaving a small border around the edges. -
Form the Spiral:
Carefully roll one of the longer edges of the dough into a tight log. Slice this log into strips, each about 3 cm wide. Begin layering the strips vertically in the cake pan, starting from the center and spiraling outward. Arrange each rectangle carefully around the center, creating a beautiful spiral design. -
Second Rise:
Cover the cake with a clean cloth or plastic wrap and allow it to rise again in a warm oven (turned off) for about 30 minutes. -
Baking:
Preheat your oven to 200°C (392°F) for static heat or 180°C (356°F) for fan-assisted heat. Once preheated, bake the cake for 20 minutes, then reduce the temperature to 180°C (356°F) for an additional 10 minutes (if using a fan oven, reduce the heat to 160°C for the last 5 minutes). -
Finishing Touches:
Once the cake is golden brown and fully cooked, remove it from the oven. Let it cool for a few minutes before inverting it onto a serving platter.
