Instructions

  1. In a large mixing bowl, combine 3 cups of all-purpose flour and 1 teaspoon of salt using a wooden spoon until evenly mixed.

  2. In another bowl, pour 1 packet of instant yeast into 1 cup of warm water and gently mix with a fork until the yeast dissolves completely and begins to bubble.

  3. Once the yeast mixture is ready, pour it into the flour and salt blend, followed by 3 large eggs. Stir until the ingredients are well incorporated, forming a smooth batter.

  4. Cover the bowl with a damp dish towel and place it in a warm area, like on top of your refrigerator, allowing the dough to rise for 20 minutes.

  5. After the first rise, check the dough for increased volume and mix it again. Let it rise for an additional 20 minutes.

  6. In a saucepan, heat oil over medium heat until hot.

  7. Drop spoonfuls of dough into the oil, using portions about the size of two golf balls. It may take a few tries to determine the ideal oil temperature, so feel free to experiment with your first batch.

  8. Once the zeppoles are golden brown, carefully remove them and place them on paper bags to absorb excess oil.

  9. While still warm, transfer the zeppoles into a clean paper bag filled with 6 cups of powdered sugar, and SHAKE gently to coat them thoroughly.

  10. Enjoy the delightful messiness of these zeppoles—if they aren’t messy enough, feel free to add even more powdered sugar!
