In another bowl, pour 1 packet of instant yeast into 1 cup of warm water and gently mix with a fork until the yeast dissolves completely and begins to bubble.

Drop spoonfuls of dough into the oil, using portions about the size of two golf balls. It may take a few tries to determine the ideal oil temperature, so feel free to experiment with your first batch.

Once the zeppoles are golden brown, carefully remove them and place them on paper bags to absorb excess oil.

While still warm, transfer the zeppoles into a clean paper bag filled with 6 cups of powdered sugar, and SHAKE gently to coat them thoroughly.
