Nalesniki (Polish Pancakes) Recipe

Description:
These delightful Nalesniki are similar to the pancakes I experienced on a recent study tour in Russia. Perfect for breakfast, brunch, or dessert, these pancakes can be filled with various options, though I prefer mine filled with a creamy cheese filling rather than fruit jams. This recipe beautifully captures the essence of traditional Polish pancakes, offering a savory and satisfying dish.

Instructions

  1. Prepare the Batter:
Start by sifting the flour into a large bowl, ensuring there are no lumps. Then, add the whole egg along with the yolks from the separated eggs into the bowl. Pour in the milk, water, and melted butter, followed by the nutmeg, and mix thoroughly until a smooth batter forms.

  2. Whip the Egg Whites:
In a separate bowl, whisk the egg whites with the salt until they form stiff peaks. Carefully fold the whipped egg whites into the batter, being gentle to maintain the fluffiness.

  3. Create the Filling:
In another bowl, cream together the softened butter and the remaining egg yolk. Incorporate the cottage cheese, sugar, and vanilla sugar, mixing until the mixture is smooth and well combined. If the filling is too thick, add a little milk to reach your desired consistency.

  4. Cooking the Pancakes:
Melt a small amount of butter in a frying pan over medium heat. Once the butter is sizzling, pour in about 2 tablespoons of the batter. Cook the pancake on both sides until it is lightly browned and cooked through. Once ready, remove the pancake from the pan and keep it warm in the oven set to low heat. Continue this process until all the batter is used, adding more butter to the pan as necessary.

  5. Assemble and Serve:
For serving, place a tablespoonful of the cheese filling onto each pancake. Gently fold the pancake over the filling and serve hot. These Nalesniki can be enjoyed as a delightful breakfast, brunch, or even a sweet dessert.

Enjoy your delicious Nalesniki! Whether you savor them plain or filled with cheese, they’re sure to be a hit at your table.
