Spicy Catfish Soup (Lele Kuah Pedas)

Ingredients

  • 500 grams catfish (Ikan Lele)
  • 10 shallots (Bawang Merah)
  • 3 cloves garlic (Bawang Putih)
  • 2 large red chilies (Cabe Merah Besar)
  • 25 bird’s eye chilies (Cabai Rawit)
  • 3 kaffir lime leaves (Daun Jeruk)
  • 1 thumb-sized piece of galangal (Lengkuas)
  • 65 ml coconut milk (Santan Kara)
  • 2 cups water
  • 1 packet mushroom broth (optional)
  • Salt and sugar to taste

Instructions

  1. Prepare the Catfish: Begin by cleaning the catfish thoroughly, ensuring it is free of any impurities. Make shallow cuts along the sides of the fish to allow flavors to penetrate better. Afterward, soak the fish in salted water for about 30 minutes to enhance its flavor and texture.
