Description

Chokladbollar, also known as Kokosbollar, Graddbullar, or Mumsmums, are delightful Swedish treats that are also popular in Denmark. These bite-sized candies are incredibly simple to prepare and offer a delightful combination of textures and flavors. If you can’t find thin wafers, you can easily substitute them with very thin sugar cookies, which can be rolled and sliced into rounds. Using an electric whisk, like a Kitchenaid, ensures a perfectly fluffy mixture. The recipe yields about 40 treats, depending on the size of the bases you choose. Instructions

  1. In a mixing bowl, whip the egg white together with the white and powdered sugars just until combined.
  2. In a separate bowl, stir the gelatin powder into the boiling water until fully dissolved.
  3. While continuously beating the egg and sugar mixture, slowly pour the dissolved gelatin in a thin stream into the mixture.
  4. Continue to whip for 25 to 30 minutes until you achieve a fluffy and firm meringue consistency.
  5. Use a glass or cookie cutter to cut out round bases from the wafers.
  6. Spoon the fluffy mixture onto each base, or for a neater presentation, utilize a piping bag to pipe the mixture onto the wafers.
  7. Place the assembled treats in the refrigerator to allow the surface to dry out; this can take anywhere from 30 minutes to a couple of hours.
  8. In a large bowl, melt the dark chocolate, ensuring it’s big enough for dipping the balls.
  9. Hold each treat by the base and dip one side into the melted chocolate at a time, taking care not to dip the base itself to prevent it from becoming soggy.
  10. Once dipped, sprinkle the chocolate with coconut or crushed nuts, and allow them to stand until the chocolate hardens.
  11. Store the finished Chokladbollar in an airtight container in the refrigerator; they also freeze very well for future enjoyment.
