- In a mixing bowl, whip the egg white together with the white and powdered sugars just until combined.
- In a separate bowl, stir the gelatin powder into the boiling water until fully dissolved.
- While continuously beating the egg and sugar mixture, slowly pour the dissolved gelatin in a thin stream into the mixture.
- Continue to whip for 25 to 30 minutes until you achieve a fluffy and firm meringue consistency.
- Use a glass or cookie cutter to cut out round bases from the wafers.
- Spoon the fluffy mixture onto each base, or for a neater presentation, utilize a piping bag to pipe the mixture onto the wafers.
- Place the assembled treats in the refrigerator to allow the surface to dry out; this can take anywhere from 30 minutes to a couple of hours.
- In a large bowl, melt the dark chocolate, ensuring it’s big enough for dipping the balls.
- Hold each treat by the base and dip one side into the melted chocolate at a time, taking care not to dip the base itself to prevent it from becoming soggy.
