Prepare the Sauce: In a saucepan, bring the water to a boil. Once boiling, add the finely chopped palm sugar and stir until it dissolves completely. Next, mix in the tamarind; while many use tamarind water, pure tamarind enhances the flavor beautifully. Stir thoroughly, then add a pinch of salt and a drizzle of sweet soy sauce. Taste and adjust as needed, then let it cool.

Prepare the Spice Mix: Using a mortar and pestle, coarsely grind the red onion, garlic, green chili, and a pinch of salt together until well combined. Drizzle a bit of the prepared sauce over this mixture.

Serve: Arrange the fried tahu in a bowl or, for an authentic touch, on a traditional stone mortar (cobek). Pour the spice mixture over the tofu, followed by the sauce, ensuring each piece is generously coated.
