Instructions

  1. Prepare the Brine: In a large pot, combine all brining ingredients except for the orange juice and cold water. Bring to a boil, then reduce to a simmer until the salt and sugar are completely dissolved.

  2. Brine the Turkey: Place the turkey in a large pot, cooler, or a sanitized bucket. Pour the brine mixture over the turkey, followed by the orange juice and cold water, ensuring the turkey is fully submerged.

  3. Refrigerate: Store the turkey in the refrigerator or a cool place for at least 8 hours, turning the turkey halfway through for even brining.

  4. Remove from Brine: After brining, discard the brine mixture and rinse the turkey thoroughly under cold water. Pat it dry with paper towels.

  5. Preheat the Oven: Set your oven to 500°F (260°C).

  6. Prepare Aromatics: In a microwave-safe container, combine the apple, onion, and cinnamon with one cup of water. Microwave on high for 5 minutes to steam the ingredients.

  7. Season the Turkey: Coat the turkey generously with canola oil, then place it breast side up in a roasting pan.

  8. Stuff the Cavity: Drain the water from the aromatics and stuff the turkey cavity with the heated mixture, along with fresh rosemary and sage.

  9. Roast: Roast the turkey at 500°F for the first 30 minutes to achieve a crispy skin.

  10. Lower the Heat: After 30 minutes, tent the breast with foil and reduce the oven temperature to 350°F (175°C). Continue roasting for an additional 90 minutes.

  11. Do Not Open the Oven: Avoid opening the oven door during cooking, as this will impact the turkey’s cooking process.

  12. Rest and Carve: Once the time is up, carefully remove the turkey from the oven, discard the foil tent, and allow the turkey to rest for at least 15 minutes before carving to ensure the juices redistribute.

This Perfect Roast Turkey recipe is sure to become a staple at your holiday gatherings, delivering delicious results every time, perfect for family feasts and festive celebrations alike. Enjoy your culinary adventure with this remarkable turkey!
