Italian Cheese and Basil Uttappam Recipe

Ingredients:

White Urad Dal (Whole) 1 cup
Rice 3 cups
Methi Seeds (Fenugreek Seeds) 1/2 teaspoon
Salt 1 tablespoon
Idli Dosa Batter 4-5 cups
Parmesan Cheese (grated) 1 cup
Dried Basil Leaves 1-2 teaspoons
Extra Virgin Olive Oil (or any oil) 4-5 teaspoons

Instructions:

  1. Soaking the Ingredients:
    Start by washing and soaking the rice, white urad dal, and methi seeds in water overnight. This step is essential to achieve a smooth batter for your uthappam.

  2. Grinding the Batter:
    The next day, grind the soaked ingredients to a smooth yet thick batter. Allow the batter to ferment for 4 to 5 hours, ensuring it rises properly. Once fermented, mix the batter well with your hands or a ladle and add the salt to taste. This will enhance the flavor of your uthappam.

  3. Preparing the Pan:
    Heat a nonstick, flat-bottomed pan or tawa over medium-high heat. Add a few drops of extra virgin olive oil to the pan, and spread it evenly. Use a tissue paper to wipe off any excess oil, leaving just a thin film on the surface. Let the pan heat until it is smoking hot.

  4. Cooking the Uttappam:
    Once the pan is hot, reduce the heat to medium. Take a ladle full of the batter and gently pour it into the center of the pan. Using the back of the ladle, spread the batter outwards in a circular motion, forming a thick pancake. You should aim for the uthappam to be slightly thicker than a regular dosa.

  5. Adding Oil and Covering:
    Drizzle a small amount of oil around the edges of the uthappam to ensure it cooks evenly. Cover the pan with a lid to cook the uthappam properly from both sides. The steam helps to cook the top, while the heat from the pan crisps up the bottom.

  6. Topping with Cheese and Basil:
    Once the uthappam is cooked on the bottom, sprinkle the grated parmesan cheese generously over the surface. Then, add the dried basil leaves for an Italian twist. Cover the pan again, allowing the cheese to melt completely.

  7. Serving:
    Be careful not to flip the uthappam. Once the cheese has melted, lift the uthappam gently and transfer it to a serving plate. Serve your hot and delicious Italian Cheese and Basil Uttappam with a side of coconut chutney and Thakkali Vengayam Sambar for a perfect fusion breakfast experience.
