For the Batter:
- 1 cup White Urad Dal (Whole)
- 3 cups Rice
- 1/2 teaspoon Methi Seeds (Fenugreek Seeds)
- 1 tablespoon Salt
For Uttapam:
- 4-5 cups Idli Dosa Batter
- 1 cup Parmesan Cheese (grated)
- 1-2 teaspoons Dried Basil Leaves
- 4-5 teaspoons Extra Virgin Olive Oil (or any other cooking oil)

Prepare the Batter:
Wash and soak the rice, urad dal, and methi seeds overnight. Grind the soaked ingredients to form a thick batter. Allow the batter to rest for 4-5 hours to ferment. Once fermented, mix well and add salt to the batter. -
Cook the Uttapam:
Heat a non-stick flat-bottomed pan (or tawa) and add a few drops of oil, spreading it evenly across the surface. Wipe off the excess oil using a tissue paper and let the pan heat until it is smoking hot. -
Make the Uttapam:
Reduce the heat to a simmer and take a ladleful of the batter. Gently place it in the center of the pan and spread it outwards in a circular motion to form a thick pancake. Drizzle a little oil around the edges and cover the pan with a lid to allow the uttapam to cook thoroughly from both sides. -
Add the Toppings:
Sprinkle the grated parmesan cheese evenly over the cooking uttapam. Add the dried basil leaves on top and cover the pan again to allow the cheese to melt completely. -
Serve:
Do not flip the uttapam. Carefully lift it from the pan and transfer it to a serving plate. Serve the Italian Cheese and Basil Uttapam hot with coconut chutney and Thakkali Vengayam Sambar for a perfect fusion breakfast.
