Add the grated zest of the lemon, then squeeze the juice and add about 10g of it. Begin blending with an immersion blender, slowly incorporating the vegetable oil until a creamy mayonnaise texture is achieved. Add a handful of fresh basil leaves, blending them into the sauce. Set the basil mayo aside to let the flavors meld together.

  2. Caramelize the Onions:
    Next, work on the caramelized onions. Peel and slice the Tropea onions in half, placing them in a pan. Sprinkle with the brown sugar, then add the water. Cook the mixture over low heat, stirring occasionally. Continue cooking until the liquid has evaporated and the onions have turned golden and sweet—this should take about 15 minutes. Remove from heat and set aside.

  3. Form and Cook the Patties:
