Instructions

  1. Cook the Potatoes
    Begin by preparing the potatoes. Place them in a large pot filled with cold water. Turn the stove on, and once the water reaches a boil, let the potatoes cook for approximately 30 to 50 minutes, depending on their size. To check for doneness, insert a fork into the potatoes: if the tines easily slide in, the potatoes are ready.

  2. Prepare the Mushrooms and Sausage
    While the potatoes cook, clean and prepare the mushrooms. Remove the stems, then slice them thinly and set them aside. Next, peel the sausages, removing the casing. In a frying pan, pour a small amount of olive oil and add a garlic clove. Once the garlic begins to release its aroma, crumble the sausages into the pan and cook them over medium heat for a few minutes, stirring occasionally. When the sausage is browned and thoroughly cooked, remove the garlic from the pan. Let the alcohol in the wine evaporate before spooning the sausage into a bowl and setting it aside.

  3. Cook the Mushrooms
    In the same pan with the residual fat, add another splash of olive oil and toss in the sliced mushrooms. Stir them for a moment, then season with a pinch of salt. Allow the mushrooms to release their moisture and cook until it begins to evaporate. Just before all the liquid disappears, reintroduce the cooked sausage into the pan and let everything mix together, allowing the flavors to meld. Give it a final quick stir, then remove the pan from the heat and sprinkle with finely chopped rosemary. Stir again, then transfer the mixture to a separate bowl and set it aside.

  4. Mash the Potatoes
    By now, the potatoes should be ready. Drain them, then let them cool for about 10 minutes. Peel the potatoes while they are still warm, as this will make the skin easier to remove. Next, mash the potatoes using a potato masher or a fork (though a fork will yield a more textured mash). Once mashed, transfer them to a large bowl.

  5. Assemble the Gattò
    Add the eggs, grated Parmigiano Reggiano cheese, salt, and pepper to the mashed potatoes. Using your hands, mix everything until well combined. Once the mixture is smooth and homogeneous, spread half of it evenly in the base of a greased baking dish. Use your hands to press the potatoes down gently, forming a compact layer.

  6. Layer the Sausage and Mushroom Filling
    Spread the sausage and mushroom mixture evenly over the potato base. Be sure to distribute the filling evenly, making sure every bite will have a good balance of sausage and mushrooms.

  7. Top and Finish
    Cover the filling with the remaining half of the mashed potato mixture, smoothing it out into a second layer. In a small bowl, combine the breadcrumbs with the remaining grated Parmigiano Reggiano. Sprinkle this breadcrumb and cheese mixture generously over the top of the dish. Dot the surface with small knobs of butter to create a golden, crispy crust as it bakes.

  8. Bake the Gattò
    Preheat your oven to 180°C (350°F). Bake the Gattò for 30 to 40 minutes, or until the top is golden and the edges are bubbling. For an extra crispy top, you can briefly broil the dish for the last 5 minutes of cooking.
