Instructions

  1. Prepare the Goat Meat
Start by removing the excess fat from the young goat meat. Cut the meat into approximately 12 evenly-sized pieces. Arrange the pieces on a baking tray, making sure they are spread out evenly.

  2. Season the Meat
Scatter fresh sage leaves, bay leaves, and a sprig of rosemary over the meat. This will infuse the goat with fragrant, herbal flavors as it cooks.

  3. Roast the Meat
Preheat the oven to 180ยฐC (350ยฐF) in static mode. Place the baking tray with the goat meat into the oven and let it roast for about 30โ€“40 minutes. Every 10 minutes, baste the meat with a little dry white wine and warm beef broth to keep it moist.

  4. Prepare the Breadcrumb Topping
While the meat is roasting, crumble the bread into small pieces and place it in a bowl. Add finely chopped parsley and crushed garlic, mixing everything together to form a savory breadcrumb mixture.

  5. Finish Roasting
After 40 minutes, remove the tray from the oven and sprinkle the breadcrumb mixture over the goat meat, covering it evenly. Return the tray to the oven and switch to the grill function. Grill for another 5โ€“7 minutes until the breadcrumbs are golden and crispy.

  6. Make the Sauce
While the goat is grilling, prepare the sauce by filtering the cooking juices from the baking tray through a fine sieve into a separate bowl. This will ensure the sauce is smooth and free of any solid bits.

  7. Serve
Once the meat has finished cooking, remove it from the oven and keep it warm. Serve the goat with the filtered cooking juices on the side, using the sauce to drizzle over the meat.

Tips and Variations

  • Meat Alternative: While Capretto (young goat) is the traditional choice for this dish, lamb or even pork can be substituted for a slightly different flavor profile.
  • Wine Pairing: A dry white wine like Pinot Grigio or a full-bodied red such as Sangiovese pairs beautifully with this dish.
  • Side Dish: Serve with roasted vegetables or a fresh, crisp salad to complement the richness of the meat.
  • Make-Ahead: The goat meat can be marinated with the herbs and wine the night before for even deeper flavor.

Capretto alla Marchigiana is a rich and flavorful Italian dish from the Marche region that brings together the tender meat of goat with aromatic herbs and a delicious breadcrumb topping. Perfect for special occasions or Sunday dinners, this dish will bring a taste of Italy to your table.
