Instructions
- In a large 12″ skillet, bring water to a boil. Optionally, add a pinch of salt to enhance the flavor.
- Once boiling, carefully add the asparagus and cook for 2-3 minutes until tender yet crisp.
- Drain the asparagus and immediately plunge it into ice water to halt the cooking process, preserving its vibrant color.
- After a few minutes, cut the asparagus into 1″ pieces for easy mixing.
- In a large bowl, combine the grape tomatoes, asparagus, minced garlic, olive oil, salt, dried basil, and lemon juice. Gently stir to ensure everything is evenly coated.
- Cover and refrigerate until ready to serve, allowing the flavors to meld beautifully. This dish can be prepared a day in advance for even better taste.
