- Total Time: 3 hours 10 minutes
- Servings: 16 servings
Ingredients:
- Olive oil
- 1 mild Italian sausage
- 5 garlic cloves
- Tomato paste
- 3 cans whole tomatoes
- Fresh basil leaves
- 3 garlic cloves (for meatballs)
- 1 pound ground beef
- 3 eggs
- 3/4 cup grated Parmesan cheese
- 3/4 cup grated Pecorino Romano cheese
- Fresh Italian parsley
- Salt and pepper to taste
Instructions:
-
Prepare the Sauce:
- Heat olive oil in a large, heavy pot over medium heat.
- Add the pork to the pot and brown it until it’s nearly cooked through. Transfer the pork to a plate.
- Brown the Italian sausage in the same pot and transfer it to the plate with the pork, leaving the fat in the pot.
- Add whole peeled garlic cloves to the pot and cook until they’re tender. Remove them from the pot and place them on the plate with the meats.
- Stir in the tomato paste until it becomes “saucy.”
- Chop up the whole tomatoes, reserving the juice in the cans, and add them to the pot. Pour in half of one can of the reserved juice.
- Season with salt and pepper to taste.
- Return the meats and garlic cloves to the pot, bring the sauce to a boil, then reduce the heat to low and let it simmer for about 1 1/2 hours.
-
Prepare the Meatballs:
- While the sauce simmers, prepare the meatballs by mixing together the ground beef, eggs, grated Parmesan cheese, grated Pecorino Romano cheese, minced garlic cloves, and chopped fresh Italian parsley in a bowl.
- Shape the mixture into meatballs.
-
Cook the Meatballs:
- Once the sauce has simmered for 1 1/2 hours, remove all the meat and garlic cloves from the pot.
- Gently add the meatballs to the sauce, turning the heat slightly higher than low.
- Let the meatballs cook in the sauce for approximately 30 minutes, or until they are cooked through.
-
