Sunday Gravy, the epitome of authentic Italian comfort food, is more than just a recipe; it’s a tradition passed down through generations. This sauce, simmered to perfection, paired with succulent meatballs, creates a culinary experience that transcends the ordinary. Prepare to embark on a journey to the heart of Italy’s kitchens, where flavor reigns supreme and every bite tells a story.

  • Preparation Time: 40 minutes
  • Cooking Time: 2 hours 30 minutes
  • Total Time: 3 hours 10 minutes
  • Servings: 16 servings

Ingredients:

  • Olive oil
  • 1 mild Italian sausage
  • 5 garlic cloves
  • Tomato paste
  • 3 cans whole tomatoes
  • Fresh basil leaves
  • 3 garlic cloves (for meatballs)
  • 1 pound ground beef
  • 3 eggs
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup grated Pecorino Romano cheese
  • Fresh Italian parsley
  • Salt and pepper to taste

Instructions:

  1. Prepare the Sauce:

    • Heat olive oil in a large, heavy pot over medium heat.
    • Add the pork to the pot and brown it until it’s nearly cooked through. Transfer the pork to a plate.
    • Brown the Italian sausage in the same pot and transfer it to the plate with the pork, leaving the fat in the pot.
    • Add whole peeled garlic cloves to the pot and cook until they’re tender. Remove them from the pot and place them on the plate with the meats.
    • Stir in the tomato paste until it becomes “saucy.”
    • Chop up the whole tomatoes, reserving the juice in the cans, and add them to the pot. Pour in half of one can of the reserved juice.
    • Season with salt and pepper to taste.
    • Return the meats and garlic cloves to the pot, bring the sauce to a boil, then reduce the heat to low and let it simmer for about 1 1/2 hours.
  2. Prepare the Meatballs:

    • While the sauce simmers, prepare the meatballs by mixing together the ground beef, eggs, grated Parmesan cheese, grated Pecorino Romano cheese, minced garlic cloves, and chopped fresh Italian parsley in a bowl.
    • Shape the mixture into meatballs.
  3. Cook the Meatballs:

    • Once the sauce has simmered for 1 1/2 hours, remove all the meat and garlic cloves from the pot.
    • Gently add the meatballs to the sauce, turning the heat slightly higher than low.
    • Let the meatballs cook in the sauce for approximately 30 minutes, or until they are cooked through.
  4. Serve and Enjoy:

    • Your Sunday Gravy and Meatballs are now ready to be served! Ladle the sauce and meatballs over cooked spaghetti or your pasta of choice.
    • Garnish with fresh basil leaves and additional grated cheese, if desired.
    • Gather your loved ones around the table and indulge in this divine culinary creation that embodies the essence of Italian cooking.

Notes:

  • This recipe is a timeless classic, perfected over generations.
  • The secret to a truly authentic Sunday Gravy lies in the slow simmering of the sauce, allowing the flavors to meld together beautifully.
  • Don’t rush the cooking process; let the sauce and meatballs simmer gently to achieve the perfect texture and depth of flavor.
  • Serve any leftover sauce and meatballs with crusty bread for a delicious Italian-inspired meal the next day.
  • Buon appetito! Enjoy your Sunday Gravy and Meatballs with loved ones and create lasting memories around the dinner table.
