Jam-Filled Croissants

Ingredients

All-purpose flour 380g
Granulated sugar 40g
Egg yolks 3
Natural plain yogurt 125g
Lemon zest 1 lemon
Ground cinnamon 1 tsp
Jam (your choice of flavor) As needed
Vanilla powdered sugar As needed

Instructions

  1. Prepare the Dough:
    Start by placing the flour, cold butter (cut into small pieces), and granulated sugar in the bowl of a food processor. Mix until the ingredients form small crumbs.

  2. Add the Wet Ingredients:
    Next, add the egg yolks, natural yogurt, lemon zest, and ground cinnamon into the mixture. Process again until everything is well incorporated, forming a soft dough.

  3. Knead and Rest the Dough:
    Once the dough is ready, transfer it onto a lightly floured surface. Knead it by hand for a few minutes until smooth. Then, wrap the dough in plastic wrap and let it rest in the fridge for at least 30 minutes.

  4. Roll Out the Dough:
    After the dough has rested, remove it from the fridge. Roll it out with a rolling pin on a lightly floured surface until it reaches a thickness of about 2mm.

  5. Cut and Fill:
    Cut the dough into small squares, each measuring about 5cm per side. Place a teaspoon of your preferred jam in the center of each square.

  6. Shape the Croissants:
    Fold each square into a triangle by folding the opposite corners together. Gently press the edges to seal, then roll each triangle into a croissant shape. Lightly bend the ends forward to create the classic croissant curve.

  7. Bake:
    Arrange the prepared croissants on a baking sheet lined with parchment paper. Preheat your oven to 180°C (350°F) and bake for about 15 minutes or until golden and puffed.

  8. Finishing Touches:
    Once the croissants are baked, remove them from the oven and let them cool completely. After cooling, dust them lightly with vanilla powdered sugar before serving.
