Instructions

  1. Prepare the Dough:
    In a large mixing bowl, add finely chopped onions, green chilli, coriander powder, garam masala, amchur, turmeric powder, salt, whole wheat flour, and jowar flour. Mix all the ingredients together until well combined.

  2. Knead the Dough:
    Gradually add water, a little at a time, and knead the mixture into a firm dough. The dough should not be sticky but should come together smoothly. Once kneaded, cover the dough and let it rest for at least 10 minutes to allow the flours to absorb the moisture.

  3. Shape the Theplas:
    After the dough has rested, divide it into medium-sized balls. Lightly dust your rolling surface with wheat flour and gently roll each dough ball into a thin circular thepla. The diameter of the thepla can be adjusted based on your preference for thickness.

  4. Cook the Theplas:
    Preheat a skillet or tawa over medium heat. Once hot, place the rolled-out thepla on the skillet. Cook for about 1-2 minutes on one side until small bubbles form. Flip the thepla, drizzle a little oil or ghee on the top, and cook the other side until golden brown spots appear. Repeat this process for the remaining dough balls, ensuring each thepla is cooked evenly.

  5. Serve:
    Stack the cooked theplas one on top of the other and serve hot. For an extra touch, drizzle a bit more ghee or oil on top of each thepla.
