  • 6-7 pounds beef roast
  • Freshly ground black pepper
  • Rock salt
  • Prepared hot mustard

Instructions:

Step Description
1 Preheat oven to 375°F (190°C).
2 Season the beef roast generously with freshly ground black pepper.
3 Insert a meat thermometer into the middle of the thickest part of the lean muscle.
4 Slather the beef roast with prepared hot mustard, ensuring it is entirely covered.
5 Cover a roasting pan with foil and create a thick layer of rock salt on the bottom, approximately the size of the roast.
6 Place the beef roast on top of the layer of rock salt, pressing down to embed the salt into the mustard.
7 Completely cover the remainder of the beef roast with rock salt, pressing it firmly into the mustard. Some salt may fall off into the pan, which is normal.
8 Roast the beef in the preheated oven for 18 minutes per pound for rare, 22 minutes per pound for medium, and 25 minutes per pound for well-done.
9 After the first 15 minutes of roasting, check the roast to ensure the coating is still intact. If there are any cracks or holes, use any leftover salt and mustard to repair them.
10 Double-check the doneness of the beef using the meat thermometer near the end of the roasting time.
11 Once done, remove the beef roast from the oven and let it stand for 15 minutes.
12 The roast will be encased in a hard ‘shell’. Using the back of a knife, gently hit the shell to crack it open and allow it to fall off.
13 Remove the shell and transfer the roast to a cutting board.
14 Slice the beef roast and serve with horseradish sauce.
15 Note: The roast will continue to cook if the hard shell is left on after removing it from the oven.
