Kadai Egg Masala Recipe
This Kadai Egg Masala is a delicious twist on the classic Kadai chicken or Kadai vegetables. Instead of chicken or vegetables, we use boiled eggs for a high-protein option. The flavorful gravy consists of sautéed onions, tomatoes, and a blend of Indian spices, with a touch of cream added for richness. The boiled eggs are tossed in this rich, aromatic masala, making it a perfect dish for lunch.

Ingredients

  • 4 Whole Eggs
  • 1 Onion, diced
  • 1 Green Bell Pepper (Capsicum), diced
  • 1 teaspoon Ginger, grated
  • 2 cloves Garlic, finely chopped
  • 1 cup Homemade tomato puree
  • 1 Cardamom (Elaichi) Pod/Seed
  • 1 teaspoon Turmeric Powder (Haldi)
  • 1 teaspoon Cumin Powder (Jeera)
  • 1 teaspoon Red Chilli Powder
  • 1 teaspoon Black Pepper Powder
  • 1 teaspoon Kasuri Methi (Dried Fenugreek Leaves)
  • 1 tablespoon Oil
  • 1 tablespoon Butter (Salted)
  • Salt, to taste

Instructions

  1. Boil the Eggs
    Start by boiling the eggs. Deshell them once cooked and set aside.

  2. Prepare the Kadai Masala
    Heat oil in a kadai or deep pan. Add the diced onions, green bell peppers, grated ginger, and chopped garlic. Sauté until the onions and peppers become soft and tender.

  3. Add the Tomatoes and Spices
    Add the homemade tomato puree, turmeric powder, cumin powder, red chilli powder, and black pepper powder to the pan. Stir well and cook until the tomatoes lose their moisture and form a thick paste.

  4. Enhance the Flavor
    Add butter and salt to the pan, followed by cardamom pods (or badi elaichi) and sauté for a couple more minutes to infuse the flavors.

  5. Add the Eggs
    Cut the boiled eggs in half and gently add them to the pan. Sprinkle in the Kasuri Methi (dried fenugreek leaves) and stir to coat the eggs in the masala.

  6. Simmer the Dish
    Cover the pan and let the Kadai Egg simmer on low heat for a few minutes to allow the flavors to meld together.

  7. Final Adjustments
    Taste the dish and adjust the salt and spices as needed.

  8. Serve
    Once the dish is ready, transfer it to a serving bowl and serve warm with roti, naan, or rice.
