Cashew Nut Ladoo (Kaju Badam Ladoo) Recipe

Ingredients:
- 1 cup Cashew nuts
- 1 cup Whole Almonds (Badam)
- 1 1/4 cups Sugar
- 1/2 cup Water
- 1 teaspoon Cardamom Powder (Elaichi)
- Ghee (for greasing)

Cooking Time: 30 minutes
Instructions:
- Begin by soaking the almonds in hot water for 15 minutes. After soaking, peel the skin off the almonds and set them aside. Drain the water and wipe the almonds dry.
- Soak the cashews in water for 15 to 20 minutes, then drain and wipe dry.
- Grind the soaked almonds and cashews together into a smooth paste. Set aside.
- In a pan, bring the sugar and water to a boil. Stir until the sugar reaches a one-string consistency. (This step is crucial for the ladoos to set properly. If missed, the mixture will not firm up.)
- Once the syrup has reached one-string consistency, add the cashew-almond paste and cardamom powder. Stir until well combined.
- Reduce the heat to medium-low and continue stirring the mixture to avoid burning.
- As the mixture cooks, large bubbles will form. Keep stirring to ensure it doesn’t burn. After 30 to 40 minutes, the mixture will thicken and begin to pull away from the sides of the pan, resembling soft dough.
- To test the consistency, pinch a small amount of dough and roll it into a ball. If it holds its shape, the mixture is ready.
- If you prefer shaped ladoos, grease a plate or tray with ghee and transfer the mixture into it, leveling it evenly. Once the dough has cooled slightly, roll it into small bite-sized balls.
- Allow the ladoos to cool completely, then store them in an airtight container for up to 5 days or refrigerate for longer shelf life.
