Ingredients:

Green cardamoms 4
Cloves 4
Cinnamon 4

Urad Dal 1 1/2 cups
Salt 1 1/4 tsp
Baking soda 1/4 tsp
Salted butter 1/2 cup
Ghee 2 tbsp
Turmeric powder 1 tsp
Red chili powder 1 tsp
Low-fat plain yogurt 1/2 cup
Tomatoes 2
Green chili 1
Coriander leaves 5-6 sprigs
Green chilies 2
Onions 1
Garam masala powder 3 tsp

Instructions:

  1. Prepare the Urad Dal:

    • Soak the black urad dal overnight in plenty of water.
    • The following morning, drain and replenish with fresh water.
    • Add baking soda and salt, then boil until cooked.
    • Drain and set aside.
  2. Cook the Rice:

    • Wash the basmati rice and soak it in water for 15 minutes, then drain.
    • Boil the rice in 3.5 cups of water with salt and garam masala powder.
    • Lower the flame, partially cover, and cook until almost done.
    • Set aside.
  3. Prepare the Urad Dal Mixture:

    • Heat butter or ghee in a skillet.
    • Add ginger-garlic paste and stir-fry until the raw smell dissipates.
    • Mix in red chili and turmeric powders with 3 tablespoons of water. Cook for 2 minutes.
    • Add chopped green chili and tomatoes. Cook on low flame until the gravy thickens and the fat separates.
    • Stir in the cooked urad dal, allowing the gravy to coat it.
    • Sprinkle chopped coriander leaves, slit green chilies, garam masala powder, quartered tomatoes, and fried onions. Lightly toss.
  4. Layer and Dum Cooking:

    • Add the cooked rice evenly over the garnished urad dal mixture.
    • Place a moist cloth on top and cover with a tight-fitting lid, sealing it with atta dough.
    • Put the sealed skillet on ‘dum’ over low flame for 15-20 minutes, allowing the flavors to meld and the rice to cook thoroughly.
  5. Serve:

    • Break the seal once the time is up, remove the cloth, and transfer the biryani to a serving dish.
    • Serve hot with raita or a dollop of yogurt on top, along with a curry of your choice.

Note: Do not blame the chef if you become addicted to this delectable dish!
