Instructions:

Prepare the Urad Dal:
- Soak the black urad dal overnight in plenty of water.
- The following morning, drain and replenish with fresh water.
- Add baking soda and salt, then boil until cooked.
- Drain and set aside.

Cook the Rice:
- Wash the basmati rice and soak it in water for 15 minutes, then drain.
- Boil the rice in 3.5 cups of water with salt and garam masala powder.
- Lower the flame, partially cover, and cook until almost done.
- Set aside.

Prepare the Urad Dal Mixture:
- Heat butter or ghee in a skillet.
- Add ginger-garlic paste and stir-fry until the raw smell dissipates.
- Mix in red chili and turmeric powders with 3 tablespoons of water. Cook for 2 minutes.
- Add chopped green chili and tomatoes. Cook on low flame until the gravy thickens and the fat separates.
- Stir in the cooked urad dal, allowing the gravy to coat it.
- Sprinkle chopped coriander leaves, slit green chilies, garam masala powder, quartered tomatoes, and fried onions. Lightly toss.

- Add the cooked rice evenly over the garnished urad dal mixture.
- Place a moist cloth on top and cover with a tight-fitting lid, sealing it with atta dough.
- Put the sealed skillet on ‘dum’ over low flame for 15-20 minutes, allowing the flavors to meld and the rice to cook thoroughly.
