Instructions

  1. Roasting Cashews:
    Begin by heating a pan over medium heat. Add 1 tablespoon of ghee to the pan. Once the ghee melts, add the halved cashew nuts and sauté them until they turn a golden brown. Once roasted, set them aside.

  2. Cooking Ash Gourd:
    In the same pan, add the grated Ash Gourd (Vellai Poosanikai). Sauté the grated Ash Gourd on medium heat, stirring regularly to ensure even cooking. The cooking process should take about 15-20 minutes. Continue stirring occasionally to prevent the Ash Gourd from sticking to the bottom or burning. The goal is to allow all the water from the Ash Gourd to evaporate, leaving behind a soft, cooked mixture.

  3. Adding Sugar and Flavors:
    Once the Ash Gourd is cooked, stir in the sugar, cardamom powder, and saffron strands. Mix well and continue to cook on medium heat, stirring constantly, until the sugar melts and the mixture thickens to a halwa-like consistency.

  4. Finishing the Halwa:
    Add the remaining 2 tablespoons of ghee into the halwa and keep stirring. As the ghee incorporates, the halwa will begin to leave the sides of the pan, signaling that it’s ready. This should take about 8 minutes.

  5. Roasting Cashews & Final Mixing:
    Stir in the roasted cashews, ensuring they are evenly distributed throughout the halwa.

  6. Serving:
    Turn off the heat and transfer the Karnataka Style Kashi Halwa into serving bowls. You can serve it either hot or cold, depending on your preference.

Serving Suggestion:
